Method of Aging and Production: First-harvest grapes are macerated for 18 hours and then pressed. Alcoholic fermentation is conducted at a controlled temperature, so the wine produced has lower alcohol, but at the same time more freshness and fruitiness. The wine matures in stainless steel containers for 10 months. Alcoholic fermentation of second-harvest wines is carried out in small, new and used, French oak barrels of the Allier type.
Vineyards: Terraced vineyards between the ages of 30 and 40 are grown under the single Guyot system. Planting density is 5,500 vines per acre.
Wine cellar: The wine tradition of the Jakončič family farm dates back to 1847, when Mihael and Carolina Jakončič took over the first vineyards in the village of Kozana in Goriška Brda, thus laying the foundation for family winemaking. The commitment to quality grape and wine production at the Jakončič farm has been and still is of primary importance. Only this type of production, combined with specific vineyard locations, can form the basis for the production of extracted, mineral-rich and structural wines.
