Jakončič Carolina Bela 2016
White Caroline's color is golden yellow. The nose is accentuated, with a distinctive scent of coconut, caramel and overripe fruits. In the mouth, the wine is dry, dense, with just the right amount of acid. Discrete aromas of ripening on yeast are also detectable. A very complex and harmonious wine that offers a long aftertaste.

Method of Aging and Production:
Manual harvesting in the second half of September and early October. The cooled grapes are macerated for 48 hours, then the grapes are pressed at low pressures. Alcoholic fermentation at controlled temperature follows. 20% of chardonnay ripens in oak barrels. After one year we pour the wines and combine them.
The vine is 30 years old. Planting density is 12,000 vines per acre. With such a high planting density, the vine suffers and gives wonderful fruit. Sometimes the roots measure 10 meters in length. The altitude is 80 to 200 m. Hand harvesting only.
The unique buzzing of a tractor out there in the beard is the only evidence that the technique can enter the world, which otherwise builds on manual labor, on tradition and knowledge that is passed down from generation to generation. The experience of the elderly drives the young people's inexperience, and at our farm, we are most proud that parents and children share the care of the vineyards, wineries and marketing.
