TIME IN BARRELS:

12 months in American oak barrels.

TASTING NOTES:

Intense cherry red colour, deep, bright, attractive with good tear and beautiful presentation. Clean aroma, of remarkable intensity where seamlessly integrated the feelings of a quality source grape and the contributions of a modern and adequate aging. Presence of ripe red fruit (blackberry, cherries in liquor) accompanied by spicy and balsamic aromas, scrub, leather and liquorice.

On the palate it is a well-structured wine, very elegant and expressive. Soft and velvety, with elegant and harmonious tannin, warm but balanced wine with a fair and refreshing acidity, well integrated and with a persistent and intense finish.

SERVING TEMPERATURE: 16/18ºC

ALCOHOLIC VOLUME: 15%

FOOD PAIRING:

Red meat, roasted with aromatic herbs, cured cheeses, fatty fish with tomato sauces, Jumillano gazpacho and Iberian sausage.

Manual harvest with double classification, in the vineyard and on the selection table in the cellar. Vinified separately by plot, depending on the soil and degree of ripeness.

Mild crushing or his absence, depending on the characteristics of the grape Fermentation at low temperature (20-24ºC) to preserve the aromatic richness of the variety. Malolactic fermentation in contact with wood.
