Jakončič Carolina Select 2011 is a medium intense garnet red. On the nose, the wine is elegant and ripe, with a distinctive scent of ripe black currant. In the mouth, the wine is dry, juicy, with elegant ripe tannins. The character in the mouth is complex, intense, creamy, with sweet sweet tannins, which indicates a long life. A very complex wine with a long aftertaste and a long life.
Composition of varieties:
Cabernet Sauvignon 8%
Method of Aging and Production:
Manual harvesting in the first half of October. The grapes are macerated for one month. The wine is then matured for 24 months in 225 liter barrels at constant temperature and humidity. We use 25% Slavonian oak, 65% French Allier and 10% French Troncaise oak.
The Goriška Brda winegrowing district, characterized by hilly terrain and mild sub-Mediterranean climate. At the heart of the Terraced Vineyard South is the oldest part of the vineyard, over 70 years old. Growth and fertility are subdued in this vineyard, allowing us to harvest late. The grapes are harvested only from the vineyards in the South position, where the ratio of varieties is already the same in location as in wine (Merlot 92%, Cabernet Sauvignon 8%).
The unique buzzing of a tractor out there in the beard is the only evidence that the technique can enter the world, which otherwise builds on manual labor, on tradition and knowledge that is passed down from generation to generation. The experience of the elderly drives the young people's inexperience, and at our farm, we are most proud that parents and children share the care of the vineyards, wineries and marketing.
