Maison Simonnet-Febvre Winery, founded in 1840, has estates in the Chablis region. Initially, Simmonet-Febvre specialized exclusively in sparkling wines produced by the traditional method, but today it is the only winemaking in the Chablis region producing Crémant de Bourgogne. The winery produces wines from grapes grown in the vineyards of the Yonne department: Côtes d'Auxerre Rouge, Bourgogne Aligoté, Saint-Bris, Irancy and Epineuil. In 2013, the company acquired 15 hectares of property near Semur en Auxois in Villaines-les-Prévôtes and Viserny, where they produce PGI-branded Coteaux de l'Auxois wines.
